World Environment Day

For this week’s St Lukes Likes as part of our dedication to the environment, the St Luke’s Sustainability team decided we’d show our support to World Environment day on June 5th. We asked the team to send their best plant – based recipes, restaurants, brands or platforms!

The global meat industry has led to destruction all over the world. And it’s not just red meat that’s the problem. Agriculture and deforestation contribute a quarter of global green-house gas emissions and animal farming is responsible for 60% of this. These emissions can come from a variety of sources. Converting forests and other landscapes into fields for animal feed releases greenhouse gases and removes trees that help suck up and store carbon dioxide in the first place. Artificial fertilisers also use up huge amounts of energy and release the greenhouse gas, nitrous oxide, which traps much more heat than carbon dioxide!

By reducing our carbon footprint through the amount of meat & dairy we are consuming, we can do our bit to lower our carbon footprint and give back to the environment. With the help of our recommendation’s we hope you can do the same.

‘With summer in full swing what better time to indulge in a scoop of Jude’s Vegan Chocolate Ice Cream. I first tried this when it arrived in our home cooking hampers to celebrate St Luke’s Day in lockdown – scrumptious!’

Jenny Busby- Producer:

‘Rukmini Iyer's Cook books are delish for veggie/vegan meals and so easy to do. I can’t remember if this is from The Roasting Tin or The Green Roasting tin but Chipotle Roasted Sweetcorn with Squash, Black Beans, Feta and Lime is one of my fav meals’

Jo Boyle – Creative:

‘After watching Seaspiracy and Cowspiracy we were left feeling pretty guilty about our meat consumption. So we’ve cut out meat completely at lunchtime and try to do at least 2 or 3 veggie dinners a week (with a little help from Gousto).

This is my favourite lunch at the moment because it’s so tasty, simple and fresh find it here:’

Hope Shooter - Account Management:

‘I have had a few amazing veggie meals at Arabica, they are not solely a veggie or vegan restaurant, but the veggie food is soo good and they have loads of options!’

Polina Harkin – Creative:

‘M&S plant based No Chicken Kiev are a revelation!! Making them later this week!’

Virginia Henry - CFO:

I’ve been ordering Soulful Food Co plant based hotpots throughout lockdown. I get 12 pots delivered each month and they are a great option for a quick, cheap and healthy lunch #SoulfulOnePot
